One of the most traditional & historically cloudy Pork Tonkotsu Ramens based on their Kurume 久留米 main shop recipe, albeit it was originally a Clear Pork Soup similar to Chuka Soba also within the same Kurume region, and then some concepts shifted to North KitaKyushu afterwards and can still be found. There’s many micro details which can be traceable, including Yokohama, Taiwan and Nagoya side, also with Udon/Soba itself. The Pork Bones are boiled down & unfiltered continuously, until the last minute of serving the sieved 呼び戻しスープ Tobimodoshi Soup (継ぎ足し系), it is sandy gritty with melted bones at the base and needs to be re-filtered for every single bowl, and also carries Fried Pork Lard 背脂を揚げた カリカリ “ラード” associated with this oldish Kurume recipe. Really fragrant and although Kotteri thick, balanced in the soup flavors rather than too heavy in your face~! Addictive almost!
